This is a sweet and salty spring salad served on peppery arugula. Grapes and feta as well as sunflower seeds are low FODMAP , so appropriate for a gut in distress.

Ingredients
4-6Carugula
2Cred grapes, halved
1/4Ccrumbled feta
2Tbspsunflower seeds or walnuts
Salad Dressing
1/4Colive oilextra virgin
1TbspChampagne vinegar
1tspDijon mustard
1tspmaple syrup
salt and pepper top taste
2Tbspmint or parsleyfresh
1lemonzest and juice ( decorate salad with a lemon wedge)
Instructions
In a large bowl toss arugula, grapes, sunflower seeds and feta together.
In a small bowl or mason jar whisk maple syrup, mustard, champagne vinegar and olive oil. Pour over the salad and toss to coat. Add salt and pepper as needed and lemon zest.
